Cut the Challah bread into 1-inch thick sticks.
In a shallow dish, whisk together all Custard ingredients.
In a separate shallow dish, combine all Cinnamon Sugar ingredients.
In a saucepan, melt the Unsalted butter over medium heat, cooking until it turns golden brown and has a nutty aroma. Be careful not to burn it.
Dip each bread stick into the Custard mixture, ensuring it's fully coated.
Place the soaked bread sticks into the Cinnamon Sugar mixture, coating them evenly.
Cook the bread sticks in the brown butter over medium heat for 2-3 minutes per side, or until golden brown and cooked through.
Serve immediately.
