Instructions
  1. Preheat oven to 325°F (160°C).
  2. In a large bowl, gently combine all Meatloaf ingredients. Avoid overmixing to maintain tenderness.
  3. Divide the meat mixture in half. Flatten one half into a loaf shape on a parchment-lined baking sheet.
  4. Sprinkle the Filling evenly over the meatloaf base.
  5. Top with the remaining meat mixture, carefully sealing in the filling.
  6. In a small saucepan, gently warm the Truffle oil and Red wine reduction for the Glaze.
  7. Brush the glaze evenly over the meatloaf.
  8. Bake for 75-90 minutes, or until the internal temperature reaches 155°F (68°C) for medium-rare.
  9. Let rest for 15 minutes before slicing and serving.
