Instructions
  1. Preheat oven to 375°F (190°C).
  2. Shuck the clams, reserving the bottom shells and clam meat. Clean the shells thoroughly.
  3. Chop the clam meat into small pieces.
  4. In a skillet, cook the pancetta until crispy. Remove from skillet and set aside.
  5. In a large bowl, combine all Filling ingredients, including the cooked pancetta and chopped clam meat. Mix well.
  6. Stuff each clam shell generously with the filling mixture.
  7. Arrange the stuffed clams in a baking dish.
  8. In a small saucepan, combine all Sauce ingredients. Bring to a simmer and cook for 5-7 minutes, reducing slightly.
  9. Pour the sauce over the stuffed clams.
  10. Bake for 25-30 minutes, or until golden brown and bubbly.
