Instructions
Preheat oven to 350°F (175°C). Spread Hazelnuts on a baking sheet and toast for 8-10 minutes, until fragrant and lightly browned. Let cool and roughly chop.
Heat Olive Oil in a large skillet over medium heat.
Add diced Sweet Potatoes and Yellow Onion to the skillet. Cook for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender and slightly browned.
Add minced Garlic and Smoked Paprika to the skillet. Cook for another 2 minutes, stirring constantly, until fragrant.
Stir in Maple Syrup, Salt, and Black Pepper.
Add chopped Rosemary and Thyme. Cook for 1 minute more.
