Instructions
  1. Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking dish.
  2. Prepare the Bourbon Glaze: In a small saucepan, combine all Bourbon Glaze ingredients. Heat over medium heat, stirring until butter is melted and glaze is slightly thickened. Set aside.
  3. In a large bowl, combine all Sweet Potato Base ingredients and beat with an electric mixer until very smooth and creamy.
  4. In a separate bowl, whisk together all Dry Ingredients.
  5. Gradually add the dry ingredients to the sweet potato mixture, mixing until just combined. Do not overmix.
  6. Gently fold in all Flavor Enhancers, including the candied ginger.
  7. Pour the batter into the prepared baking dish and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the spoon bread is baking, gently reheat the Bourbon Glaze if needed.
  9. Once the spoon bread is out of the oven, brush generously with the Bourbon Glaze. Let cool slightly before serving.
