Sweetgrass-Infused Berry Syrup
A more nuanced berry syrup with a deeper sweetgrass flavor, achieved through a longer infusion and the addition of a touch of vanilla.

Mixed Berries (strawberries, blueberries, raspberries)
3/4 cup
Organic Cane Sugar
1/4 cup
Maple Syrup (Grade A)
2 tbsp
Dried Sweetgrass (culinary grade)
1/2 cup

A more nuanced berry syrup with a deeper sweetgrass flavor, achieved through a longer infusion and the addition of a touch of vanilla.
Instructions
- Combine Berries, Sugar, Maple Syrup, and Water in a medium saucepan.
- Add Sweetgrass to the saucepan.
- Bring the mixture to a boil over medium heat, stirring constantly until the sugar dissolves.
- Reduce heat to low and simmer for 30-35 minutes, or until the syrup has thickened to your desired consistency. Stir occasionally to prevent sticking.
- Remove from heat and stir in Vanilla Extract and Lemon Juice.
- Let the syrup steep for 10 minutes to further infuse the sweetgrass flavor.
- Strain the syrup through a fine-mesh sieve to remove the sweetgrass and berry seeds. Discard the solids.
- Let cool completely before storing in an airtight container in the refrigerator.
