What You'll Need

Equipment: Large skillet, 9x13 inch baking dish, Spatula Shop these items →
Instructions
  1. Preheat oven to 350°F (175°C).
  2. Brown the Ground beef in a large skillet over medium heat. Drain off any excess grease.
  3. Stir in the Taco Seasoning, Diced tomatoes, Black beans, and Frozen corn. Simmer for 10 minutes.
  4. Lightly grease a 9x13 inch baking dish.
  5. Layer 6 Tortillas on the bottom of the dish. Spread half of the Beef mixture over the tortillas.
  6. Sprinkle with 1 cup of the Monterey Jack cheese.
  7. Repeat layers: 6 Tortillas, remaining Beef mixture, and remaining Monterey Jack cheese.
  8. Bake for 25-30 minutes, or until bubbly and cheese is melted.
  9. Top with Sour cream, Salsa, and Sliced avocado before serving.
