Instructions
- Preheat oven to 350°F (175°C).
- Brown the Ground beef in a large skillet over medium heat. Drain off any excess grease.
- Stir in the Taco Seasoning, Diced tomatoes, Black beans, and Frozen corn. Simmer for 10 minutes.
- Lightly grease a 9x13 inch baking dish.
- Layer 6 Tortillas on the bottom of the dish. Spread half of the Beef mixture over the tortillas.
- Sprinkle with 1 cup of the Monterey Jack cheese.
- Repeat layers: 6 Tortillas, remaining Beef mixture, and remaining Monterey Jack cheese.
- Bake for 25-30 minutes, or until bubbly and cheese is melted.
- Top with Sour cream, Salsa, and Sliced avocado before serving.
