Instructions
- In a shallow bowl, whisk together all Wet Dredge ingredients.
- In another shallow bowl, combine all Breading ingredients.
- Heat vegetable oil in a large, heavy-bottomed skillet over medium-high heat to 350°F (175°C).
- Dip each Catfish fillet into the Wet Dredge, then dredge in the Breading, making sure to coat all sides.
- Carefully place the breaded Catfish fillets into the hot oil, being careful not to overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown and cooked through.
- Remove the fried Catfish from the skillet and place on a wire rack lined with paper towels to drain excess oil.
- Serve immediately with your favorite sides.
