  1. In a shallow bowl, whisk together all Wet Dredge ingredients.
  2. In another shallow bowl, combine all Breading ingredients.
  3. Heat vegetable oil in a large, heavy-bottomed skillet over medium-high heat to 350°F (175°C).
  4. Dip each Catfish fillet into the Wet Dredge, then dredge in the Breading, making sure to coat all sides.
  5. Carefully place the breaded Catfish fillets into the hot oil, being careful not to overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown and cooked through.
  6. Remove the fried Catfish from the skillet and place on a wire rack lined with paper towels to drain excess oil.
