Preheat oven to 400°F (200°C). Cut the top off a head of Garlic, drizzle with Olive Oil, wrap in foil, and roast for 40-45 minutes, or until soft and golden.
In a bowl, combine all Marinade ingredients. Add Shrimp and toss to coat. Marinate for at least 20 minutes, or up to 45 minutes.
While Shrimp marinates, prepare the Butter Sauce. In a small saucepan, melt Butter over medium heat. Add roasted Garlic (squeeze cloves out of the skin) and cook for 1 minute.
Deglaze the pan with White Wine, scraping up any browned bits. Let simmer for 2-3 minutes, until slightly reduced.
Stir in Lemon Juice and Red Pepper Flakes. Remove from heat and stir in Parsley.
Preheat grill to medium-high heat.
Thread Shrimp onto skewers (optional).
Grill Shrimp for 2-3 minutes per side, or until pink and opaque.
Remove Shrimp from grill and drizzle with Butter Sauce. Serve immediately.
