1 pound Large Shrimp-peeled and deveined
1/4 cup Olive Oil
2 tbsp Lemon Juice-freshly squeezed
2 tbsp Garlic-minced
1 tsp Smoked Paprika

A slightly more refined version of the classic, featuring roasted garlic in the butter sauce for a deeper flavor. Uses a touch of white wine for deglazing.
Instructions
  1. Preheat oven to 400°F (200°C). Cut the top off a head of Garlic, drizzle with Olive Oil, wrap in foil, and roast for 40-45 minutes, or until soft and golden.
  2. In a bowl, combine all Marinade ingredients. Add Shrimp and toss to coat. Marinate for at least 20 minutes, or up to 45 minutes.
  3. While Shrimp marinates, prepare the Butter Sauce. In a small saucepan, melt Butter over medium heat. Add roasted Garlic (squeeze cloves out of the skin) and cook for 1 minute.
  4. Deglaze the pan with White Wine, scraping up any browned bits. Let simmer for 2-3 minutes, until slightly reduced.
  5. Stir in Lemon Juice and Red Pepper Flakes. Remove from heat and stir in Parsley.
  6. Preheat grill to medium-high heat.
  7. Thread Shrimp onto skewers (optional).
  8. Grill Shrimp for 2-3 minutes per side, or until pink and opaque.
  9. Remove Shrimp from grill and drizzle with Butter Sauce. Serve immediately.
