4 large Sweet Potatoes
1 tbsp Brown Sugar
1 lb Ground Beef
1 medium Onion-diced
2 cloves Garlic-minced

A step up from the classic, this version incorporates a homemade spice blend for the beef and uses a blend of cheeses for a richer flavor. It also includes a touch of brown sugar in the sweet potato for added sweetness.
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub the Sweet Potatoes. Pierce each potato several times with a fork. Rub with Brown Sugar.
  3. Bake Sweet Potatoes for 45-60 minutes, or until tender when pierced with a fork.
  4. While the potatoes are baking, prepare the Ground Beef Filling. In a large skillet, brown the Ground Beef over medium-high heat. Drain off any excess grease.
  5. Add the diced Onion and minced Garlic to the skillet and cook until softened, about 5 minutes.
  6. Stir in the Chili Powder, Cumin, Smoked Paprika, Cayenne Pepper, Salt, and Black Pepper. Cook for another 2 minutes, stirring constantly.
  7. Once the Sweet Potatoes are cooked, carefully slice them open lengthwise.
  8. Fluff the inside of each Sweet Potato with a fork.
  9. Top each Sweet Potato with the Ground Beef Filling, Shredded Cheddar Cheese, Shredded Monterey Jack Cheese, a dollop of Sour Cream, and Chopped Green Onions.
  10. Dot each potato with Butter before serving.
