Instructions
  1. In a bowl, combine Olive oil, Lemon juice, Garlic powder, Paprika, Salt, and Black pepper. Marinate Chicken breasts for at least 30 minutes.
  2. Heat a large skillet over medium-high heat. Sear Chicken breasts for 5-7 minutes per side, or until cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt Butter over medium heat. Add Sliced cremini mushrooms and Garlic and cook until softened and browned, about 7-10 minutes.
  4. Sprinkle Flour over the mushrooms and cook for 1 minute, stirring constantly.
  5. Deglaze the pan with Dry sherry, scraping up any browned bits. Add Chicken broth and bring to a simmer. Cook until Sauce has thickened, about 2-3 minutes. Stir in Dried thyme and Heavy cream.
  6. Return Chicken breasts to the skillet. Spoon Sauce over the Chicken and top with shredded Monterey Jack cheese.
  7. Cover the skillet and cook until Cheese is melted, about 2-3 minutes. Serve immediately.
