Instructions
- In a bowl, combine Olive oil, Lemon juice, Garlic powder, Paprika, Salt, and Black pepper. Marinate Chicken breasts for at least 30 minutes.
- Heat a large skillet over medium-high heat. Sear Chicken breasts for 5-7 minutes per side, or until cooked through. Remove from skillet and set aside.
- In the same skillet, melt Butter over medium heat. Add Sliced cremini mushrooms and Garlic and cook until softened and browned, about 7-10 minutes.
- Sprinkle Flour over the mushrooms and cook for 1 minute, stirring constantly.
- Deglaze the pan with Dry sherry, scraping up any browned bits. Add Chicken broth and bring to a simmer. Cook until Sauce has thickened, about 2-3 minutes. Stir in Dried thyme and Heavy cream.
- Return Chicken breasts to the skillet. Spoon Sauce over the Chicken and top with shredded Monterey Jack cheese.
- Cover the skillet and cook until Cheese is melted, about 2-3 minutes. Serve immediately.
