Instructions
  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Brown Butter in a large skillet over medium heat. Remove from heat and set aside. Add Onion to the skillet with the browned butter and cook, stirring occasionally, until caramelized, about 25-30 minutes. Stir in Sage during the last 5 minutes of cooking.
  3. In a large bowl, whisk together Milk, Eggs, Sherry, Nutmeg, Salt, and Pepper.
  4. Arrange Bread cubes in the prepared baking dish. Spread the caramelized Onion and Sage mixture evenly over the bread.
  5. Pour the Custard mixture over the bread and onions, pressing down gently to ensure the bread is submerged. Sprinkle with Gruyere cheese.
  6. Dot the top with the browned Butter.
  7. Bake for 50-55 minutes, or until golden brown and the custard is set. Let cool slightly before serving.
