To make the Caramelized Onions: Melt Butter in a large skillet over medium-low heat. Add Yellow onions and cook slowly, stirring occasionally, for 45-60 minutes, until deeply golden brown and caramelized. Stir in Brown sugar and Thyme during the last 5 minutes of cooking. Set aside.
In a medium bowl, combine all Sauce ingredients and mix well. Set aside.
Divide the Dry-aged ground beef into 4 equal portions. Form each portion into a thin patty.
Heat a large cast iron skillet over medium-high heat. Add the beef patties and smash them thin with a spatula. Cook for 2-3 minutes per side, until browned and cooked through.
During the last minute of cooking, place a slice of Vermont cheddar cheese on each patty to melt.
Spread a generous amount of Sauce on each tortilla.
Layer Shredded romaine lettuce, Slow-cooked caramelized onions, and Cornichons on top of the sauce.
Place a cheesy beef patty on top of the toppings.
Fold the sides of the tortilla inward, then tightly roll up from the bottom.
