Prepare the Beef Filling: In a skillet, brown the Ground beef over medium heat. Drain any excess grease. Stir in the Taco seasoning and Water. Simmer for 5-7 minutes, or until the liquid is absorbed.
Prepare the Egg Wraps: In a bowl, whisk together the Eggs, Milk, Salt, and Black pepper. Heat a lightly oiled non-stick skillet over medium heat.
Pour about 1/4 cup of the egg mixture into the skillet and swirl to form a thin, crepe-like wrap. Cook for 1-2 minutes per side, or until set.
Repeat with remaining egg mixture to make 4 egg wraps.
Assemble the Tacos: Place a portion of the Beef Filling in the center of each egg wrap. Top with Shredded cheddar cheese, Salsa, and Sour cream. Fold and serve immediately.
