Instructions
  1. Bloom the gelatin in 1/4 cup of cold water for 5 minutes.
  2. In a saucepan, gently heat the Heirloom Tomato Juice and Lemon Juice. Do not boil.
  3. Remove from heat and stir in the bloomed gelatin until dissolved. Season with White Pepper.
  4. Strain the tomato jelly through a fine-mesh sieve to ensure clarity.
  5. Pour a thin layer of tomato jelly into individual molds or glasses. Chill for 15 minutes to set.
  6. Arrange Smoked Salmon, Dill, and Cucumber over the set jelly layer.
  7. Pour the remaining tomato jelly over the filling.
  8. Refrigerate for at least 4 hours, or until firm.
  9. Garnish with a dollop of Crème Fraîche before serving.
