To make the Sauce, heat Olive oil in a saucepan over medium heat. Add Garlic and cook for 1 minute until fragrant. Add Red wine and cook until reduced by half. Add Crushed tomatoes, Tomato paste, and Thyme. Bring to a simmer and cook for 30 minutes, stirring occasionally.
Lightly grease a muffin tin.
Place one tortilla in each muffin cup, gently pressing it into the shape of the cup.
Spread approximately 3 tablespoons of the Sauce mixture into each tortilla cup.
Sprinkle with Mozzarella, Asiago, and Pecorino Romano cheeses.
Top with Prosciutto, Roasted red peppers, and Caramelized onions.
Bake for 18-22 minutes, or until the cheese is melted and bubbly and the tortillas are golden brown.
