Instructions
Preheat oven to 375°F (190°C).
Cook Pasta according to package directions. Drain and set aside.
Sauté Shiitake Mushrooms in a pan with Olive Oil until softened and browned. Deglaze the pan with Dry Sherry and cook until evaporated.
In a large saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1-2 minutes, creating a roux.
Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly.
Reduce heat to low and stir in Gruyère Cheese until melted and smooth. Season with Nutmeg, Sea Salt, and White Pepper.
In a small bowl, toss Sourdough Bread cubes with Olive Oil, Parmesan Cheese, and Thyme. Spread on a baking sheet and bake for 8-10 minutes, or until golden brown and crispy.
In a large bowl, combine cooked Pasta, Tuna, Sauce, Peas, and sautéed Mushrooms.
Pour mixture into a greased 9x13 inch baking dish.
Sprinkle with Sourdough Crumble.
Bake for 20-25 minutes, or until bubbly and golden brown.
