Instructions
Preheat oven to 375°F (190°C).
Cook Noodles according to package directions. Drain and set aside.
In a saucepan, melt Butter from Sauce ingredients over medium heat. Whisk in Flour and cook for 1 minute.
Gradually whisk in Milk and Heavy Cream from Sauce ingredients until smooth. Bring to a simmer, stirring constantly. Cook for 5 minutes, or until thickened. Stir in Salt, Pepper, and Nutmeg.
In a large bowl, combine cooked Noodles, Tuna, Sauce, Peas, Celery, and Mushrooms.
Stir in Cheddar and Parmesan Cheese from Cheese.
Pour mixture into a greased 9x13 inch baking dish.
In a small bowl, combine Panko Bread Crumbs and Melted Butter from Topping. Sprinkle over casserole.
Bake for 25-30 minutes, or until bubbly and golden brown.
