Instructions
  1. Grate the Cucumber and place in a clean kitchen towel. Squeeze out as much excess water as possible. This prevents a watery Tzatziki.
  2. In a medium bowl, combine all Sauce ingredients. Stir well to combine.
  3. Taste and adjust seasoning as needed. Add more lemon juice for tanginess, or salt and pepper to taste.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld. This step is important for the best flavor.
