Instructions
- Grate the Cucumber and place in a fine-mesh sieve. Sprinkle with a pinch of salt and let sit for 10 minutes to draw out excess moisture. Gently squeeze out the excess water.
- In a medium bowl, combine all Sauce ingredients. Stir well to combine.
- Taste and adjust seasoning as needed. Add more lemon juice or vinegar for tanginess, or salt and pepper to taste.
- Cover and refrigerate for at least 1 hour to allow flavors to meld. The longer it sits, the better it tastes.
