Instructions
  1. Grate the Cucumber and place in a fine-mesh sieve. Sprinkle with a pinch of salt and let sit for 10 minutes to draw out excess moisture. Gently squeeze out the excess water.
  2. In a medium bowl, combine all Sauce ingredients. Stir well to combine.
  3. Taste and adjust seasoning as needed. Add more lemon juice or vinegar for tanginess, or salt and pepper to taste.
  4. Cover and refrigerate for at least 1 hour to allow flavors to meld. The longer it sits, the better it tastes.
