What You'll Need

Equipment: Pot, Colander, Large Bowl, Sous Vide Immersion Circulator, Vacuum Sealer (optional), Knife, Cutting Board Shop these items →
Instructions
  1. Cook Ramen Noodles according to package directions. Drain and rinse with cold water. Roughly chop the noodles and set aside.
  2. Cook Eggs using the Sous Vide method at 63°C (145°F) for 60 minutes. Immediately transfer to an ice bath to stop cooking. Peel and roughly chop the eggs.
  3. Prepare Homemade Japanese Mayonnaise (recipe not included).
  4. Prepare Homemade Chili Oil with Crispy Garlic (recipe not included).
  5. In a large bowl, combine chopped Ramen Noodles, chopped Eggs, Homemade Japanese Mayonnaise, Dark Soy Sauce, Black Sesame Oil, and Chili Oil. Mix well.
  6. Stir in Green Onions and crumbled Nori.
  7. Spread the Ramen Egg Salad mixture onto Sourdough Bread slices. Serve immediately.
