1 tsp Fleur de sel
1/2 tsp White pepper

A refined take on the classic slider, utilizing dry-aged beef, house-made pickles, and a brioche bun.
Instructions
  1. Make the Pickles: Combine White vinegar, Water, Sugar, and Dill seed in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes. Pour over sliced Kirby cucumbers and let cool for at least 30 minutes.
  2. In a large bowl, gently combine the Beef, Onion, Fleur de sel, and White pepper. Do not overmix.
  3. Divide the beef mixture into 12 equal portions and form into thin patties, slightly larger than the slider buns.
  4. Heat a large griddle or skillet over medium-high heat.
  5. Cook the patties for 2-3 minutes per side, until browned and cooked through.
  6. While the patties are cooking, lightly brush the inside of the Brioche slider buns with Clarified butter.
  7. Combine all Sauce ingredients in a small bowl.
  8. Place a house-made pickle chip and a smear of Sauce on the bottom bun.
  9. Top with a cooked patty and the top bun. Serve immediately.
