Instructions
  1. Heat Olive Oil in a large pot over medium heat.
  2. Add Onion and Carrot and cook until softened, about 5 minutes.
  3. Add Garlic and cook for 1 minute more.
  4. Add Potatoes and Vegetable Broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.
  5. Stir in Mixed Wild Greens and cook until wilted, about 5 minutes.
  6. Season with Salt and Black Pepper to taste. Serve hot.
