Instructions
  1. Heat Olive Oil in a large pot over medium heat.
  2. Add Yellow Onion and Carrot and cook until softened, about 5 minutes.
  3. Add Garlic and cook for 1 minute more.
  4. Deglaze the pot with Dry White Wine, scraping up any browned bits from the bottom.
  5. Add Yukon Gold Potatoes and Vegetable Broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.
  6. Stir in Mixed Wild Greens and cook until wilted, about 5 minutes.
  7. Stir in Lemon Juice and season with Salt and Black Pepper to taste.
  8. Serve hot, garnished with grated Parmesan Cheese.
