1.5 lbs Yukon Gold Potatoes-peeled and cut into 1/2 inch fries
1 cup Wild Onions-cleaned, bulbs and greens separated
3 tbsp Olive Oil
1 tsp Sea Salt
1/2 tsp Black Pepper

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Toss Potatoes with Olive Oil, Sea Salt, Black Pepper, and Rosemary in a large bowl.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Bake for 25 minutes, flipping halfway through.
  5. While potatoes bake, prepare Aioli: Combine all Aioli ingredients in a small bowl and mix well.
  6. In the last 10 minutes of cooking, add Wild Onion bulbs to the baking sheet.
  7. Remove from oven and toss with Wild Onion greens. Serve immediately with Aioli.
