Wild Onion And Potato Fry
Crispy potato fries elevated with the addition of fresh rosemary and a creamy homemade aioli featuring wild onion greens.

Yukon Gold Potatoes-peeled and cut into 1/2 inch fries
1 cup
Wild Onions-cleaned, bulbs and greens separated
3 tbsp
Olive Oil
1 tsp
Sea Salt
1/2 tsp
Black Pepper

Crispy potato fries elevated with the addition of fresh rosemary and a creamy homemade aioli featuring wild onion greens.
Instructions
- Preheat oven to 400°F (200°C).
- Toss Potatoes with Olive Oil, Sea Salt, Black Pepper, and Rosemary in a large bowl.
- Spread potatoes in a single layer on a baking sheet.
- Bake for 25 minutes, flipping halfway through.
- While potatoes bake, prepare Aioli: Combine all Aioli ingredients in a small bowl and mix well.
- In the last 10 minutes of cooking, add Wild Onion bulbs to the baking sheet.
- Remove from oven and toss with Wild Onion greens. Serve immediately with Aioli.
