Wild Ramp Cornbread
A sophisticated cornbread featuring browned butter, smoked gouda, and a hint of nutmeg. Uses a blend of cornmeal and masa harina for texture.

A sophisticated cornbread featuring browned butter, smoked gouda, and a hint of nutmeg. Uses a blend of cornmeal and masa harina for texture.
Instructions
- Preheat oven to 375°F (190°C). Grease and flour an 8-inch square baking pan.
- Brown the butter in a saucepan over medium heat until golden brown and fragrant. Let cool slightly.
- In a large bowl, combine all Dry Ingredients.
- In a separate bowl, whisk together the Buttermilk, browned butter, and Eggs.
- Add the Wet Ingredients to the Dry Ingredients and stir until just combined. Do not overmix.
- Gently fold in the chopped Wild Ramps and shredded Smoked Gouda.
- Pour batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool slightly before serving.
