Instructions
  1. In a bowl, combine all Marinade ingredients and marinate Elk Steaks for at least 30 minutes, or up to 4 hours.
  2. In a separate shallow dish, combine all Breading ingredients.
  3. Remove Elk Steaks from the marinade and dredge in the Breading mixture, ensuring they are fully coated.
  4. Heat Vegetable Oil in a large skillet over medium-high heat.
  5. Fry Elk Steaks for 3-4 minutes per side, or until golden brown and cooked through.
  6. Remove Elk Steaks from the skillet and set aside.
  7. To make the Gravy, melt Butter in the same skillet over medium heat.
  8. Whisk in All-Purpose Flour and cook for 1-2 minutes, creating a roux.
  9. Gradually whisk in Elk Stock or Beef Broth, stirring constantly to prevent lumps.
  10. Bring to a simmer and cook for 5-7 minutes, or until thickened.
  11. Stir in Heavy Cream, Salt, and Black Pepper to taste.
  12. Serve Elk Steaks immediately with the Gravy.
