Instructions
- Prepare the Sauce: In a small bowl, combine soy sauce, Chinese black vinegar, sugar, and ground Sichuan peppercorns. Set aside.
- Cook the Noodles: Cook noodles according to package directions until al dente. Drain well and set aside.
- Infuse the Oil: Heat vegetable oil in a small pan over medium heat. Add minced garlic and chili flakes. Cook until fragrant, about 30 seconds. Be careful not to burn the garlic.
- Assemble the Noodles: Divide the cooked noodles into two bowls. Pour the sauce over the noodles.
- Add Oil and Sesame Oil: Drizzle the infused garlic oil and sesame oil over the noodles.
- Add Toppings: Top with crushed peanuts, chopped scallions, and preserved mustard greens.
- Serve: Toss well before serving and enjoy immediately.
