Instructions
  1. Preheat oven to 350°F (175°C).
  2. Combine all Crust ingredients and press into the bottom of a 9-inch springform pan.
  3. Bake crust for 8-10 minutes. Let cool.
  4. In a large bowl, beat all Filling ingredients until smooth and creamy.
  5. Pour filling over cooled crust.
  6. Combine all Pecan Topping ingredients and sprinkle evenly over the filling.
  7. Bake for 55-70 minutes, or until the center is just slightly jiggly.
  8. Let cool completely, then refrigerate for at least 4 hours before serving.
