Aunt Prudence's Prune And Armagnac Clafoutis
A classic French baked custard with prunes soaked in Armagnac. This version uses readily available ingredients and a straightforward method.

A classic French baked custard with prunes soaked in Armagnac. This version uses readily available ingredients and a straightforward method.
Instructions
- Soak the Prunes in the Armagnac for at least 30 minutes.
- Preheat oven to 350°F (175°C). Butter a 9-inch pie dish or baking dish with the Butter.
- In a bowl, whisk together the Milk, Sugar, Eggs, Flour, Vanilla Extract, Nutmeg, and Salt until smooth. Ensure there are no lumps.
- Arrange the soaked Prunes evenly in the prepared baking dish.
- Pour the Custard mixture over the Prunes.
- Bake for 45-50 minutes, or until the clafoutis is puffed and golden brown. A knife inserted near the center should come out mostly clean.
- Let cool slightly before serving. Dust with powdered sugar if desired.
