Instructions
  1. Prepare the Pastry: In a large bowl, combine the Pastry ingredients. Cut the butter into the flour using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough just comes together. Flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: In a medium bowl, combine the Filling ingredients. Mix well until smooth and creamy.
  3. Assemble and Bake: Preheat oven to 375°F (190°C). Roll out the pastry dough and cut out 6 circles using a cookie cutter or glass. Press the circles into tartlet tins. Fill each tartlet with the goat cheese mixture. Bake for 20-25 minutes, or until golden brown.
  4. Cool slightly before serving.
