
Aunt Maude’s Marzipan Mince Pies
Classic mince pies with a sweet marzipan layer, perfect for the holidays.
2 1/2 cups
All-purpose flour
1 cup
Cold unsalted butter-cubed
1/4 cup
Ice water
1/4 tsp
Salt
1 lb
Store-bought mincemeat

Classic mince pies with a sweet marzipan layer, perfect for the holidays.
Instructions
- Make the Pastry: In a large bowl, combine the Pastry ingredients. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together.
- Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Prepare the Mincemeat Filling: Stir the Brandy into the Mincemeat Filling.
- Roll out the pastry and cut out circles to fit a 12-cup muffin tin.
- Press the pastry into the muffin tin. Spoon the Mincemeat Filling into each pastry case.
- Roll out the Marzipan Layer and cut out circles slightly smaller than the muffin tin openings.
- Place a Marzipan Layer circle on top of each mince pie filling.
- Brush the edges of the pastry with the Egg Wash.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown.
- Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
