Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut zucchini into fry shapes.
  3. In a shallow dish, combine Flour, Parmesan Cheese, Garlic Powder, Salt, and Pepper.
  4. In another shallow dish, place beaten Egg.
  5. In a third shallow dish, place Panko Bread Crumbs.
  6. Dip each zucchini fry in the flour mixture, then the egg, and finally the panko bread crumbs, ensuring they are fully coated.
  7. Heat Vegetable Oil in a large oven-safe skillet over medium-high heat.
  8. Fry zucchini fries in batches for 2-3 minutes per side, until golden brown. Transfer to a baking sheet.
  9. Bake for 10-15 minutes, or until crispy.
  10. While zucchini fries are baking, prepare the Scampi Sauce. In a saucepan, melt Butter over medium heat.
  11. Add Garlic and cook for 1 minute, until fragrant.
  12. Pour in White Wine and Lemon Juice, and simmer for 2 minutes.
  13. Add Chicken Broth and Red Pepper Flakes. Bring to a simmer.
  14. Add Shrimp and cook for 3-5 minutes, or until pink and cooked through.
  15. Stir in Parsley.
  16. Toss the baked zucchini fries with the Scampi Sauce and serve immediately.
