  1. Season the Chuck roast with Salt and Black pepper.
  2. In a large pot or Dutch oven, brown the Chuck roast in batches over medium-high heat. Remove and set aside.
  3. Add the Yellow onion and Red bell pepper to the pot and cook until softened, about 7 minutes.
  4. Stir in the Garlic and cook for 1 minute more.
  5. Add the Chili powder, Smoked paprika, Cumin, Oregano, and Cayenne pepper to the pot and cook for 1 minute, stirring constantly.
  6. Return the Chuck roast to the pot. Pour in the Crushed tomatoes and Beef broth. Bring to a boil, then reduce heat and simmer for 90 minutes, or until the beef is tender.
  7. Stir in the Pinto beans and Great Northern beans and simmer for another 15 minutes.
  8. Stir in the Dark chocolate and Apple cider vinegar until melted and combined. Serve hot.
