Instructions
🎙️ Cook with voice coach- Season the Chuck roast with Salt and Black pepper.
- In a large pot or Dutch oven, brown the Chuck roast in batches over medium-high heat. Remove and set aside.
- Add the Yellow onion and Red bell pepper to the pot and cook until softened, about 7 minutes.
- Stir in the Garlic and cook for 1 minute more.
- Add the Chili powder, Smoked paprika, Cumin, Oregano, and Cayenne pepper to the pot and cook for 1 minute, stirring constantly.
- Return the Chuck roast to the pot. Pour in the Crushed tomatoes and Beef broth. Bring to a boil, then reduce heat and simmer for 90 minutes, or until the beef is tender.
- Stir in the Pinto beans and Great Northern beans and simmer for another 15 minutes.
- Stir in the Dark chocolate and Apple cider vinegar until melted and combined. Serve hot.
