1 tsp Fleur de sel
1/2 tsp Freshly ground black pepper
1 cup Homemade mayonnaise
2 tbsp Chipotle peppers in adobo sauce-finely minced

A premium version featuring Wagyu beef, a house-made chipotle aioli, and artisanal cheese, finished with a drizzle of balsamic glaze.

Instructions

  1. Gently form the Wagyu ground beef into 4 patties, seasoning with Fleur de sel and freshly ground black pepper. Avoid overworking the meat.
  2. Prepare the Aioli by combining all Aioli ingredients in a small bowl and blending until smooth and creamy.
  3. Heat a cast iron skillet or grill pan over high heat.
  4. Sear the burger patties for 3-4 minutes per side for medium-rare, or until desired doneness is reached. Let rest for 5 minutes.
  5. During the last minute of cooking, place 2 slices of Smoked Gouda cheese on each patty to melt.
  6. Spread a generous amount of Aioli on one side of each tortilla.
  7. Place a cheeseburger patty on one tortilla. Top with Heirloom tomatoes, Pickled red onions, and Arugula.
  8. Fold the tortilla over the filling to create a quesadilla.
  9. Brush the outside of the quesadilla with Clarified butter. Grill for 4-5 minutes per side, or until golden brown and crispy.
  10. Drizzle with Balsamic glaze and serve immediately.
