Instructions

  1. In a bowl, combine all Burger Patties ingredients and mix gently. Form into 4 patties, being careful not to overwork the meat.
  2. Prepare the Sauce by combining all Sauce ingredients in a small bowl and whisking until well combined.
  3. Heat a cast iron skillet or griddle over medium-high heat.
  4. Cook the burger patties for 4-5 minutes per side for medium, or until desired doneness is reached.
  5. During the last minute of cooking, place 2 slices of Pepper jack cheese on each patty to melt.
  6. Spread a generous amount of Sauce on one side of each tortilla.
  7. Place a cheeseburger patty on one tortilla. Top with Diced Roma tomatoes, Thinly sliced red onion, and Pickled jalapeños.
  8. Fold the tortilla over the filling to create a quesadilla.
  9. Butter the outside of the quesadilla. Grill for 3-4 minutes per side, or until golden brown and crispy.
  10. Serve immediately.
