  1. Cut chicken thighs into 1-inch pieces.
  2. In a bowl, combine buttermilk, gochujang, garlic powder, smoked paprika, sea salt, and pepper. Marinate the chicken for at least 4 hours, or overnight.
  3. Dredge the marinated chicken in potato starch, ensuring it's fully coated.
  4. Heat avocado oil in a large skillet over medium-high heat. Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes per batch. Remove and drain on paper towels.
  5. While the chicken is frying, prepare the Sauce. In a bowl, whisk together the homemade sweet chili sauce, Japanese mayonnaise, sriracha, soy sauce, sesame oil, minced black garlic, rice vinegar, and honey.
  6. Add the fried chicken to the Sauce and toss to coat evenly.
  7. Serve immediately over forbidden black rice with steamed broccolini florets, garnished with black sesame seeds and sliced scallions.
