  1. Cut chicken thighs into 1-inch pieces.
  2. In a bowl, combine buttermilk, hot sauce, garlic powder, paprika, salt, and pepper. Marinate the chicken for at least 30 minutes, or up to 4 hours.
  3. Dredge the marinated chicken in cornstarch, ensuring it's fully coated.
  4. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes per batch. Remove and drain on paper towels.
  5. While the chicken is frying, prepare the Sauce. In a bowl, whisk together the sweet chili sauce, mayonnaise, sriracha, soy sauce, sesame oil, grated ginger, rice vinegar, and honey.
  6. Add the fried chicken to the Sauce and toss to coat evenly.
  7. Serve immediately over jasmine rice with steamed broccoli florets, garnished with sesame seeds.
