Instructions
  1. Prepare the Marinade: Combine all Marinade ingredients in a bowl. Add Cod fillets and marinate for at least 1 hour, or up to overnight.
  2. Prepare the Lemon-Dill Aioli: Combine all Lemon-Dill Aioli ingredients in a bowl and mix well. Refrigerate until ready to serve.
  3. Combine all Breading ingredients in a shallow dish.
  4. Remove Cod fillets from the marinade and dredge in the Breading, ensuring it's fully coated.
  5. Heat oil in a deep fryer or large pot to 375°F (190°C).
  6. Carefully fry the coated Cod fillets in batches for 4-6 minutes, or until golden brown and crispy.
  7. Remove the fish and place on a wire rack to drain excess oil.
  8. Serve immediately with hand-cut French fries, homemade coleslaw, and Lemon-Dill Aioli.
