
Cousin Cuthbert's Champagne Sorbet
A refreshing and simple champagne sorbet, perfect for a light dessert or palate cleanser. This version uses readily available ingredients and a straightforward method.

Champagne or Sparkling Wine - dry
1 cup
Granulated Sugar
1/4 cup
Lemon Juice - fresh

Instructions
- Combine all Champagne Mixture ingredients in a saucepan. Heat over medium heat, stirring until sugar is completely dissolved. Do not boil.
- Remove from heat and let cool completely. This can be expedited by placing the mixture in an ice bath.
- Pour the cooled mixture into an ice cream maker and churn according to the manufacturer's instructions (typically 20-30 minutes).
- Transfer the sorbet to an airtight container and freeze for at least 2 hours to firm up before serving.
