1 medium Onion-chopped
2 cloves Garlic-minced
1 (15 ounce) can Kidney beans-drained and rinsed
1 (15 ounce) can Corn-drained

A hearty and comforting casserole with ground beef, beans, corn, and a cheesy cornbread topping.
Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground beef over medium-high heat. Drain any excess grease.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in kidney beans, corn, diced tomatoes, taco seasoning, chili powder, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  5. Pour the beef mixture into a 9x13 inch baking dish.
  6. Prepare the cornbread topping according to package directions, using milk and egg.
  7. Stir in cheddar cheese into the cornbread batter.
  8. Spread the cornbread batter evenly over the beef mixture.
  9. Bake for 20-25 minutes, or until the cornbread is golden brown and cooked through. Let cool slightly before serving.
