A premium take on the classic meatloaf, utilizing high-quality ingredients and a slow-braising technique for exceptional tenderness and flavor.
Instructions
- Preheat oven to 325°F (160°C).
- In a large bowl, combine all Meatloaf ingredients. Mix gently but thoroughly.
- Shape the mixture into a loaf and place in a Dutch oven.
- In a small bowl, combine all Glaze ingredients. Mix well.
- Pour the Glaze over the meatloaf.
- Cover the Dutch oven and braise in the oven for 90-120 minutes, or until the internal temperature reaches 160°F (71°C).
- Remove from oven and let rest for 15 minutes before slicing and serving.

- 1 medium Shallot-finely minced
- 3 cloves Garlic-minced
- 2 tbsp Sherry
- 1 tbsp Fresh thyme-chopped
- 1 tbsp Fresh rosemary-chopped
- 1 tsp Sea salt
- 1/2 tsp Freshly ground black pepper
- Glaze
- 1 cup Tomato passata
- 1/4 cup Maple syrup
- 1 tbsp Balsamic vinegar
- 1/2 tsp Red pepper flakes
