  1. Preheat oven to 375°F (190°C).
  2. Make Cranberry Compote: Combine all Cranberry Compote ingredients in a saucepan. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until cranberries have burst and sauce has thickened. Let cool completely.
  3. Brush a baking sheet with Clarified butter.
  4. Layer 4-5 sheets of Filo dough on the baking sheet, brushing each layer with Clarified butter.
  5. Cut filo stack into 24 equal squares.
  6. Top each square with a cube of Triple-cream brie and a spoonful of Cranberry Compote.
  7. Fold corners of filo dough towards the center, creating a small parcel.
  8. Brush parcels with Clarified butter.
  9. Bake for 10-12 minutes, or until golden brown and Brie is melted.
  10. Sprinkle with Maldon sea salt before serving.
