2 medium Yellow Onions-thinly sliced
1 tbsp Olive Oil
1 tbsp Balsamic Vinegar
2 slices Gruyere Cheese
1 oz Fontina Cheese-shredded

A refined grilled cheese with a touch of sweetness from balsamic glaze and a richer cheese blend.

Instructions

  1. Heat Olive Oil in a large skillet over medium heat.
  2. Add Yellow Onions to the skillet and cook, stirring occasionally, for 30-40 minutes, or until deeply caramelized and golden brown. Deglaze the pan with Balsamic Vinegar during the last 5 minutes of cooking. Season with Salt and Black Pepper.
  3. Spread Butter on one side of each slice of Brioche Bread.
  4. Place one slice of bread, butter-side down, in a clean skillet over medium-low heat.
  5. Layer Gruyere Cheese and Fontina Cheese on top of the bread.
  6. Top with the caramelized Onions and sprinkle with Fresh Thyme.
  7. Place the second slice of bread on top, butter-side up.
  8. Cook for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey.
  9. Drizzle with Balsamic Glaze before serving.
