Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a saucepan, melt Butter over medium heat. Whisk in All-purpose flour and cook for 1 minute, creating a roux.
  3. Gradually whisk in Heavy cream until smooth. Bring to a simmer, stirring constantly. Cook until thickened, about 5-7 minutes.
  4. Remove from heat and whisk in Egg yolks one at a time, ensuring each is fully incorporated. Stir in Nutmeg, Salt, and White pepper. This is your Duchess Potato Cream.
  5. Arrange thinly sliced Potatoes in the prepared baking dish, overlapping slightly. Spread a layer of Duchess Potato Cream over the potatoes.
  6. Layer Smoked Black Forest ham over the cream.
  7. Sprinkle Comté cheese, Fontina cheese, and Parmesan cheese evenly over the ham.
  8. Repeat layers of potatoes, Duchess Potato Cream, and cheeses until all ingredients are used, ending with a layer of cheese.
  9. In a small bowl, combine Panko breadcrumbs and browned Butter. Sprinkle evenly over the gratin.
  10. Bake for 45-50 minutes, or until bubbly and golden brown.
