Instructions

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together all Dry Ingredients.
  3. In a separate bowl, combine all Wet Ingredients.
  4. Pour the Wet Ingredients into the Dry Ingredients and stir until just combined. Do not overmix.
  5. Fill muffin liners about 2/3 full.
  6. Bake for 19-21 minutes, or until a toothpick inserted into the center comes out clean.
  7. While muffins are baking, prepare the Lemon Glaze. In a small bowl, whisk together Powdered Sugar and Lemon Juice until smooth. Add more lemon juice if needed to reach desired consistency.
  8. Let muffins cool slightly before drizzling with Lemon Glaze.
