
Lemon Poppy Seed Muffins Recipe
A slightly more tender and flavorful lemon poppy seed muffin, using buttermilk and a touch of almond extract.

All-Purpose Flour
3/4 cup
Granulated Sugar

Baking Powder

A slightly more tender and flavorful lemon poppy seed muffin, using buttermilk and a touch of almond extract.
Instructions
- Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together all Dry Ingredients.
- In a separate bowl, combine all Wet Ingredients.
- Pour the Wet Ingredients into the Dry Ingredients and stir until just combined. Do not overmix.
- Fill muffin liners about 2/3 full.
- Bake for 19-21 minutes, or until a toothpick inserted into the center comes out clean.
- While muffins are baking, prepare the Lemon Glaze. In a small bowl, whisk together Powdered Sugar and Lemon Juice until smooth. Add more lemon juice if needed to reach desired consistency.
- Let muffins cool slightly before drizzling with Lemon Glaze.
