Liver Spread Sandwiches
A luxurious sandwich featuring rich duck liver mousse, sweet fig jam, and crisp microgreens on toasted brioche.

Duck Liver Mousse-homemade or high quality store bought
2 tbsp
Fig Jam
1/4 cup
Microgreens-mixed
1/4 tsp
Fleur de Sel
A luxurious sandwich featuring rich duck liver mousse, sweet fig jam, and crisp microgreens on toasted brioche.
Instructions
- Toast Brioche slices lightly until golden brown.
- Spread Duck Liver Mousse evenly on two slices of toasted Brioche.
- Spread Fig Jam evenly on the other two slices of toasted Brioche.
- Layer Microgreens on top of the Duck Liver Mousse.
- Sprinkle Fleur de Sel over the microgreens.
- Close the sandwiches with the Fig Jam-covered bread slices.
- Cut in half and serve immediately.
