  1. Preheat oven to 400°F (200°C).
  2. Remove stems from Mushrooms and gently scrape out some of the gills to create more space for filling.
  3. Sauté Shallot in a small pan with Olive Oil until softened. Let cool.
  4. In a medium bowl, combine all Filling ingredients, including the sautéed Shallot, until well blended.
  5. Stuff each Mushroom cap generously with the Filling mixture.
  6. Bake Mushrooms for 15 minutes.
  7. While Mushrooms bake, crisp Prosciutto in a dry skillet until golden and brittle. Crumble.
  8. Sprinkle crumbled Prosciutto over the stuffed Mushrooms.
  9. Return to oven and bake for another 10-15 minutes, or until golden brown and bubbly.
