  1. Preheat oven to 375°F (190°C).
  2. Remove stems from Mushrooms and gently scrape out some of the gills to create more space for filling.
  3. Sauté Shallot in a small pan with a little butter until softened. Let cool.
  4. In a medium bowl, combine all Filling ingredients, including the sautéed Shallot, until well blended.
  5. Stuff each Mushroom cap generously with the Filling mixture.
  6. In a small bowl, combine melted Butter, Panko Bread Crumbs, and Parmesan Cheese.
  7. Sprinkle the Bread Crumb mixture evenly over the stuffed Mushrooms.
  8. Place Mushrooms on a baking sheet and bake for 25-30 minutes, or until golden brown and bubbly.
