Instructions
- Prepare Homemade Mayonnaise: Whisk together 1 egg yolk, 1 tbsp lemon juice, 1 tsp Dijon mustard, and a pinch of salt. Slowly drizzle in 1 cup of neutral oil while whisking constantly until emulsified.
- In a large bowl, combine all Dressing ingredients and whisk until smooth.
- Add Chicken, Bacon, Aged White Cheddar, Gruyere, Parmesan, Celery, Shallots, and Chives to the bowl with the Dressing.
- Gently mix all ingredients until well combined.
- Chill for at least 30 minutes before serving to allow flavors to meld.
- Garnish with Candied Pecans before serving.

- 1/4 tsp Smoked paprika
- Garnish
- 2 tbsp Candied pecans-chopped
