Instructions

  1. Prepare Homemade Mayonnaise: Whisk together 1 egg yolk, 1 tbsp lemon juice, 1 tsp Dijon mustard, and a pinch of salt. Slowly drizzle in 1 cup of neutral oil while whisking constantly until emulsified.
  2. In a large bowl, combine all Dressing ingredients and whisk until smooth.
  3. Add Chicken, Bacon, Aged White Cheddar, Gruyere, Parmesan, Celery, Shallots, and Chives to the bowl with the Dressing.
  4. Gently mix all ingredients until well combined.
  5. Chill for at least 30 minutes before serving to allow flavors to meld.
  6. Garnish with Candied Pecans before serving.
